Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the flaky, crisp outer shell that encloses the filling.
Minced fowl or veal
Provides the main savoury filling, bound by the moistening gravy.
Good gravy
Moistens the minced meat so the filling stays juicy rather than dry.
Egg
Brushed on as a wash so the pastry browns evenly and takes on a glossy colour.
Bread crumbs
Coat the outside to add a crisp, golden crust when fried.

The step that matters

Sealing the edges. If the pastry edges are not wetted and pressed firmly, they can open in the hot fat and let the filling leak out and soak the dripping.

Swap the mace

How well each one fits the dish's main ingredients (veal, garlic, lemon, white pepper, egg, bread, beef):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, garlic, lemon, white pepper, egg, bread, beef. Candidates are from the same food group and used in at least 100 recipes.
