Gooseberry Wine to Resemble Champagne
Ingredients
Directions
Select gooseberries that are full grown but not ripe, preferring those with less flavor when ripe.
Remove unsound or bruised fruit and nib off the remains of blossoms and fruit-stalks.
Bruise the gooseberries in a clean tub that holds 15 to 20 gallons.
Add cream of tartar to promote fermentation.
Ferment in a cask of 10 gallons, stirring frequently.
