What each ingredient does

Mutton loin
Gives the broth its meaty flavour and rich body as it simmers.
Upper-crust bread
Softens as it simmers and adds body and gentle thickness to the broth.
Mace
Adds a warm, aromatic spice note to the broth.

The step that matters

Skimming the foam after the boil. Foam rises as the meat heats and carries impurities and fat. Removing it early keeps the broth clear and clean-tasting rather than cloudy or greasy.

Swap the mace

How well each one fits the dish's main ingredients (mutton, bread):

  1. Pepperfits better
  2. Garlicfits better
  3. Parsleyfits better
  4. Macethe original
