What each ingredient does

Neck of mutton or fowl
Provides the main meat, whose gelatin and flavor enrich the broth as it simmers.
Pickled pork
Adds salty, savory flavor to the broth during the long simmer.
Lobster or crab
Adds shellfish flavor and tender pieces when added near the end of cooking.
Flour
Thickens the broth as it is stirred into the liquid with water.
Rice
Softens as it cooks and gives body to the broth.

The step that matters

Adding the lobster or crab. Shellfish cooks quickly and turns tough and rubbery if simmered too long, so it is added only half an hour before serving.
