Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Oysters in Scallop-shells

Oven, in the book's wordsA very quick oven

Ingredients

Directions

The book says “a very quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a stewpan, melt a bit of butter and add minced parsley, shallot, and a little pepper.

  2. Brown the mixture, dust in a little flour, then add the strained oyster liquor and a little good gravy.

  3. Work the mixture until it reaches a sauce-like consistency.

  4. Toss in the oysters and add lemon juice.

  5. Fill the scallop shells with the mixture, then sprinkle grated bread crumbs on top.

  6. Add small pieces of butter on top and place them in a very hot oven at 400°F (200°C) until browned.
