Roasted Cucumbers

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Parboil the cucumbers, split them, and remove all seeds and soft parts.

  2. Fill the cucumbers with forcemeat and tie them to keep their shape.

  3. Dust the cucumbers with flour and roast them in a Dutch oven at 400°F (200°C), basting with butter until browned.

  4. Serve the cucumbers with a good gravy.
