Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onion
Browning in butter adds deep colour and savoury, caramelised flavour to the gravy.
Butter
Fat that carries the browned onion flavour and gives the gravy richness.
Small beer
Liquid base that adds malty depth and helps extract flavour during simmering.
Walnut pickle or mushroom ketchup
Concentrated savoury, umami-rich seasoning that deepens the gravy's flavour.

The step that matters

Fry the onion until brown. Browning the onion develops caramelised, savoury flavour through the Maillard reaction. Pale onion gives a flat, sweet-tasting gravy with less depth.
