What each ingredient does

Green gooseberries
The fruit that is packed into the bottles and softened by the heat of the boiler.
Sugar
Sweetens the fruit and forms a syrup that helps preserve it.

The step that matters

Letting the bottles cool in the water. Once the fire is out, the bottles should cool slowly in the water. A sudden change in temperature can crack glass, so leaving them to cool gradually helps keep the bottles intact.
