What each ingredient does

Ready-boiled wheat
Forms the bulk and body of the dish as the base grain.
New milk
Provides liquid that softens the wheat and forms the creamy base.
Egg yolks
Thicken the mixture as they heat and enrich it with richness and colour.
Currants
Add chewy texture and fruity sweetness.

The step that matters

Stir over heat after adding the egg mixture. Egg yolks thicken when heated gently but can curdle or scramble if the mixture gets too hot or boils hard. Constant stirring spreads the heat evenly and keeps the custard-like texture smooth.
