What each ingredient does

White currant juice
Provides the tart fruit flavour and most of the liquid base of the shrub.
Rum
Acts as the spirit base and preserves the mixture while it stands.
Lump sugar
Adds sweetness that balances the acidity of the currant juice.

The step that matters

Straining until clear. Fine particles from the juice stay suspended unless removed, so a cloudy result usually means the mixture needs straining again through the jelly bag before bottling.
