Ingredients

Directions

Prepare

  1. Salt the meat thoroughly just before placing it in the pot.

  2. Wrap the meat in a floured coarse cloth and place it in boiling water.

  3. Boil the meat as long as you would any other salt beef of the same size.

Cure

  1. Sprinkle the meat, then let it drain for a few hours before rubbing it with salt.

  2. Rub the meat with common salt, saltpetre, and optional cochineal.

  3. Rub the pickle into the meat daily for a week, turning the meat only.

  4. After eight days, it will be ready.

Finish

  1. Drain it from the pickle after sixteen days.

  2. Smoke the meat at the oven mouth when heated with wood or send it to the baker's for a few days.

What each ingredient does

Beef or pork
The lean meat that the salt penetrates, firming as it cures and holds moisture.
Coarse sea salt
Draws out moisture and seasons the meat while helping preserve it.
Saltpetre
Helps the cured meat keep a pink colour and slows spoilage.
Cochineal
Adds a red colour to the cured surface.
Coarse sugar
Softens the sharpness of the salt and adds a gentle sweetness.

The step that matters

Salt the meat thoroughly before boiling. Salt must penetrate the whole cut to preserve and season it evenly. Patchy salting leaves lightly salted areas where spoilage can start during the long cure.
