What each ingredient does

Beef palates
Provide the main meat, which becomes tender after long simmering and stewing.
Butter
Adds richness and fat to the gravy, giving it a smoother mouthfeel.
Flour
Thickens the gravy so it coats the palates instead of running thin.
Milk
Forms the base of the white fricassee sauce, adding mild sweetness and creaminess.
Cream
Adds fat and body, making the sauce richer and silkier.
Mushroom powder
Adds concentrated savory, earthy flavour to the gravy.

The step that matters

Simmer the palates until they can be peeled. Palates need long, gentle simmering to become tender and for the tough outer skin to loosen. Rushing this leaves the meat chewy and hard to peel. Keeping the liquid at a gentle simmer rather than a hard boil prevents the meat from toughening and breaking apart.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, butter, flour, milk, cream, mushroom):

  1. Nutmegfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against beef, pepper, butter, flour, milk, cream, mushroom. Candidates are from the same food group and used in at least 100 recipes.
