To Roast a Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Cut a slit in the knuckle of the pork leg with a sharp knife.

  3. Fill the slit with chopped sage, onion, pepper, and salt.

Roast and serve

  1. Roast the pork until half done, then score the skin in slices without cutting deeper than the outer rind.

  2. Serve with apple sauce and potatoes.

What each ingredient does

Pork leg
Forms the bulk of the dish and provides the meat that becomes tender and juicy during roasting.
Sage
Adds aromatic herbal flavour that penetrates the meat from the filling in the slit.
Onion
Adds savoury sweetness and aroma as it softens inside the meat during roasting.

The step that matters

Scoring the skin without cutting deeper than the outer rind. Cutting into the meat beneath the rind lets juices escape and dries the flesh. Shallow scoring keeps moisture inside while the skin crisps and renders its fat.

Swap the onion

How well each one fits the dish's main ingredients (pork, sage, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against pork, sage, pepper. Candidates are from the same food group and used in at least 100 recipes.
