What each ingredient does

Fowl
Provides the main cooked meat, which is gently stewed until tender in the broth.
Rice
Absorbs flavour from the broth and forms the starchy side that surrounds the fowl.
Mutton broth
Cooks the fowl and carries seasoning, giving the dish its savoury base.
Onion
Adds aromatic flavour to the broth during stewing.

The step that matters

Adding the rice at the right time. Rice added too early turns soft and mushy, while added too late it stays firm. Timing it about 30 minutes before the fowl is done lets the grains cook fully through without breaking down.

Swap the mace

How well each one fits the dish's main ingredients (mutton, onion, pepper, rice, parsley):

  1. Thymefits better
  2. Celeryfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against mutton, onion, pepper, rice, parsley. Candidates are from the same food group and used in at least 100 recipes.
