What each ingredient does

Chickens
Provide the main meat that is cooked and then simmered in the sauce.
Flour
Thickens the strained sauce so it clings to the chicken.
Butter
Adds richness and smooth body to the thickened sauce.
Onion
Adds savory aromatic flavor to the simmering gravy.

The step that matters

Thickening the strained sauce. Flour must be cooked into the butter and sauce while simmering, or it stays raw-tasting and lumpy. Adding it to a hot liquid without stirring also causes clumps, so whisk steadily as it thickens.
