Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spinach
Adds leafy green flavor and color, and body once puréed through the sieve.
Onions
Build sweetness and savory depth as they soften during stewing.
Butter
Adds fat for richness and a smooth mouthfeel to the broth.
Carrots
Contribute natural sweetness and thicken the soup when strained.
Suet
Melts in the hot liquid, leaving fat-rich, tender dumplings.

The step that matters

Passing the vegetables through the sieve. Pressing the stewed vegetables through a coarse cloth or sieve breaks down their fibers and releases starch and pulp, which give the soup its body. Stopping early leaves the texture grainy and thin.
