Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Clear Gravy

Ingredients

Directions

Prepare

  1. Slice the beef thinly.

  2. Broil a portion over a very hot fire just to color the gravy, not to cook it.

  3. Place the broiled and raw beef in a nicely tinned stew-pan.

Make the gravy

  1. Add the onions, cloves, black peppercorns, allspice berries, and sweet herbs.

  2. Cover with hot water and bring to a boil.

  3. Skim the surface well two or three times.

  4. Cover and simmer until the gravy is strong.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat flavor and body of the finished gravy as it simmers slowly in water.
Onions
Add savory sweetness and aromatic depth to the broth as they cook down.

The step that matters

Skim the surface well two or three times. Skimming removes coagulated proteins and fat that rise as the liquid heats. Removing them keeps the gravy clear and free of cloudiness and greasy off-flavors.

Swap the onion

How well each one fits the dish's main ingredients (beef, clove, allspice):

  1. Carrotfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against beef, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
