Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Anchovies
Dissolve into the sauce to give it a deep, savoury, salty flavour.
Flour
Thickens the butter into a roux that gives the sauce body.
Butter
Carries the flavours and adds richness and a nutty, browned taste.
Sherry
Adds acidity and aromatic depth to the sauce.
Strong gravy
Supplies the liquid base and meaty savouriness of the sauce.

The step that matters

Browning the butter and flour. The roux must be cooked until browned, because the colour and nutty flavour develop only with sustained heat; underdone flour leaves a raw, pasty taste and weak thickening.

Swap the mace

How well each one fits the dish's main ingredients (butter, flour, clove, pepper, allspice, onion, thyme):

  1. Marjoramfits better
  2. Winter savoryfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against butter, flour, clove, pepper, allspice, onion, thyme. Candidates are from the same food group and used in at least 100 recipes.
