A French Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat your oven to 350°F (175°C).
Lay the puff pastry round on the edge of a pie dish.
Fill the dish with veal slices, jointed rabbits or chickens, forcemeat balls, sweetbreads, artichoke bottoms, and truffles.
Boil the calf's feet until tender, then chop the meat.
Chop the mutton suet and apples separately.
Combine all ingredients in the pie dish and cover with another layer of puff pastry if desired.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
