Savoury Rice

Ingredients

Directions

  1. Wash and pick the rice.

  2. Stew the rice gently in a small quantity of veal or rich mutton broth with the onion, mace, pepper, and salt.

  3. When the rice has swelled but is not mushy, dry it on a sieve in front of the fire.

  4. Serve the rice dry or place it in the center of a dish and pour heated gravy around it.
