What each ingredient does

Bitter almonds
Provide the characteristic strong almond aroma and flavour of the drops.
Sweet almonds
Supply the bulk of the almond body and mild, nutty flavour.
Sugar
Sweetens the paste and helps it hold its shape while baking.
Egg whites
Bind the ground almonds and sugar into a cohesive paste that holds its shape.

The step that matters

Bake gently. Egg white and sugar proteins set and brown quickly at high heat, so gentle baking dries the drops through without scorching or cracking them, keeping them pale and tender.

Swap the almond
