To Keep Gooseberries
Ingredients
Directions
Gather gooseberries before they become too large, removing stalks and buds carefully.
Fill wide-mouthed bottles with the gooseberries and loosely cork them.
Place the bottles upright in a boiler filled with water up to the neck.
When the fruit looks scalded, remove the bottles and let them cool completely.
Cork the bottles tightly and seal the tops with rosin.
Dig a trench in a less-used part of the garden deep enough to hold the bottles, covering them with 18 inches of earth.
In frost, add fresh stable litter to prevent the ground from hardening.
Alternatively, fill the bottles with cold water after scalding, cork them, and store in a damp or dry place.
