To Preserve Yeast
Ingredients
Directions
Whisk the yeast until thin.
Wash a large wooden dish and let it dry completely.
Using a soft brush, apply a layer of yeast to the inside of the dish.
Allow each layer to dry thoroughly before adding another.
Repeat until you have a thickness of 2 to 3 inches.
To use, cut a piece out and stir it in warm water.
For brewing, dip large handfuls of birch tied together in the yeast and let it dry.
Repeat the dipping process as needed, ensuring no dust contaminates the yeast.
When ready to brew, add a bunch of the prepared yeast to the wort.
