An Excellent Method of Making Punch

Ingredients

Directions

Prepare the sugar and lemon

  1. Rub the sugar over the lemons until it absorbs the yellow part of the skins.

  2. Put the sugar into a bowl and squeeze the lemon juice over it.

  3. Press the sugar and lemon juice together well to enhance the flavor.

Make the punch

  1. Mix the sugar and lemon juice with boiling water until the mixture is cool.

  2. If desired, strain the mixture to remove pulp before adding liquor.

  3. Add equal parts brandy and rum to the mixture, adjusting to taste.

  4. For added richness, mix in ½ pint of porter if using only rum.

What each ingredient does

Lemons
Supply acidity and aromatic oil from the peel that flavours the punch.
Sugar
Adds sweetness and, rubbed into the peel, draws out flavourful lemon oil.
Brandy
Adds fruity warmth and body as the main spirit.
Rum
Adds depth and a rounded sweetness alongside the brandy.

The step that matters

Pressing the sugar and lemon juice together. Pressing dissolves the sugar into the juice and draws oils from the peel, so the flavour is built before water and liquor dilute it. Skipping this leaves the citrus flavour weak and uneven.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, brandy, rum):
