What each ingredient does

Oranges
Supply juice for sweet-sour balance and aromatic oils from the peel.
Lemons
Add acidity and bright citrus aroma from the peel and juice.
Sugar
Sweetens the punch and draws flavor out of the grated peels.
Fresh milk
Its proteins curdle in the acidic citrus, trapping cloudiness so the punch can clear.
Rum or brandy
Serves as the spirit base that extracts and carries the citrus flavors.

The step that matters

Strain through a jelly bag until clear. Milk proteins curdle in the acidic citrus and form fine particles that cloud the punch. Straining slowly through a jelly bag removes these curds, so rushing this step leaves the drink hazy.

Swap the lemon
