What each ingredient does

French brandy
Serves as the spirit base that extracts flavour from the peels and keeps the punch stable.
Lemon and orange peels
Infused into the brandy to release aromatic oils that flavour the punch.
Lemon and orange juice
Adds acidity and fresh citrus brightness that balances the sugar and spirit.
Double-refined sugar
Provides sweetness that softens the alcohol and balances the citrus acidity.
New milk
Softens the punch and mellows harsh flavours as it stands, clarifying the liquor.

The step that matters

Straining before adding the milk. Straining through a fine sieve removes peel and pulp so the liquor clears. Milk added afterwards curdles and clouds the drink, which the fine straining cannot undo, so the order of steps matters for clarity.

Swap the lemon
