Gooseberries for Tarts
Ingredients
Directions
Prepare boiling water in a large kettle.
Dissolve roach-alum in the water until it feels slightly rough.
Place gooseberries in a large sieve without overlapping.
Submerge the sieve in boiling water until the gooseberries look scalded.
Gently turn the gooseberries onto a cloth and cover them.
Repeat the process until all gooseberries are scalded.
Pick out any bad or broken gooseberries the next day.
Bottle the good gooseberries and fill with the alum-water used for scalding.
Seal the bottles tightly.
