Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body of the dish, becoming tender through slow braising.
Stock
Braising liquid that adds moisture and savoury flavour as the celery cooks.
Beef marrow
Adds richness and a soft, fatty texture to the filled croutons.
Butter
Adds fat to the sauce, giving it richness and a smooth, glossy finish.
Lemon juice
Adds acidity that brightens the rich sauce and marrow.

The step that matters

Braise gently over low heat. Slow, gentle heat softens the celery's fibres evenly without breaking the pieces down, so they hold their shape when dished.

Swap the celery

How well each one fits the dish's main ingredients (beef, lemon, pepper, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against beef, lemon, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
