To Bottle Gooseberries
Ingredients
Directions
Gather green Warrington gooseberries in the morning and pick them clean.
Fill clean bottles with the gooseberries and pour in syrup.
Cork the bottles tightly and tie them with string.
Place the bottles upright in a large pot and fill with cold water to the necks of the bottles.
Cover the pot and bring the water to a boil, then remove from heat and let stand for 5 minutes.
Check if the fruit has risen about an inch from the bottom of the bottle to ensure it's scalded.
Allow the bottles to cool completely, then check and refit any corks that may have loosened.
Dip the nozzle of each bottle in hot bottle-wax mixed with melted bees'-wax (1 oz bees'-wax to 1 lb bottle-wax).
Store the finished bottles in a cellar, arranged like wine bottles.
