What each ingredient does

Vegetable marrow
Forms the main body of the dish, becoming soft and tender as it simmers.
Butter
Adds richness and fat, giving the sauce a smooth, rounded mouthfeel.
White stock
Provides the liquid that gently cooks the marrow and forms the base of the sauce.
Lemon juice
Adds acidity that brightens the flavour of the sauce.
Powdered sugar
Adds a little sweetness that balances the savoury stock and lemon.

The step that matters

Boiling the marrow gently. Boiling too hard can break the soft marrow pieces apart and make the sauce cloudy. A gentle simmer keeps the pieces intact while they cook through.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, pepper, sugar, lemon):

  1. Parsleyfits better
  2. Cinnamonfits about as well
  3. Cardamomfits about as well
  4. Nutmegthe original

Fit is the average pairing score against butter, pepper, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
