Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Stewed Lentils and Bacon
Ingredients
Directions
Prepare the lentils
Soak the lentils in cold water for 4 hours.
Put the lentils in a saucepan with plenty of cold water and boil for 30 minutes.
Strain the lentils using a colander.
Stew
Return the lentils to the saucepan and cover with barley-water made by boiling the pearl barley in 1 pint of water.
Add the onion, 3 cloves of garlic, and a bouquet garni.
Trim the bacon or salt pork and blanch it for a few minutes if desired.
Add the bacon to the saucepan with the lentils.
Simmer until the lentils are thoroughly cooked, then season with pepper, coarse sea salt, and chopped parsley.
Serve
Serve the lentils on a dish with the bacon on top.

What each ingredient does
- Lentils
- Form the bulk of the dish and, as they cook, thicken the stew into a soft, hearty texture.
- Bacon or salt pork
- Adds savoury fat and salty flavour that seasons the lentils as they simmer.
- Pearl barley
- Its starch thickens the cooking liquid, adding body to the stew.
- Onion
- Adds aromatic sweetness and depth of flavour as it softens in the stew.
The step that matters
Soaking and boiling the lentils before stewing. Lentils that are not soaked and then boiled may stay firm or cook unevenly. The soak and initial boil soften the seed coats so the lentils finish tender during the simmer.
