Sole Au Gratin

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean the sole as directed.

  2. Butter an oval gratin tin.

  3. Place half of the minced mushroom, eschalot, and parsley mixture at the bottom of the tin and sprinkle lightly with bread crumbs.

  4. Lay the sole on top of the bread crumbs and cover it with the remaining herb mixture. Season with pepper and salt.

  5. Dot the top with a few pieces of butter and sprinkle generously with bread crumbs.

  6. Pour stock around the fish, but not over it. If desired, add white wine.

  7. Bake at 400°F (200°C) for 15 to 20 minutes and serve in the gratin tin.
