Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the outer wrap and provides the main meaty texture when simmered until tender.
Beef suet
Adds fat that keeps the stuffing moist and flavourful during cooking.
Bread crumbs
Absorb moisture and give the stuffing body so it holds together when rolled.
Egg
Binds the stuffing ingredients together into a cohesive mixture.
Stock
Cooks the rolls gently in liquid, keeping the beef moist and adding savoury flavour.

The step that matters

Rolling and tying the beef tightly. If the rolls are loose, stuffing can escape and the beef may open during simmering. Tight rolls and secure twine keep the filling inside and help the meat cook evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (beef, bread, parsley, thyme, marjoram, lemon, egg):
