What each ingredient does

Chestnuts
Form the main body of the puree once cooked and pressed through a sieve.
Butter
Adds richness and a smooth, silky mouthfeel to the puree.
Milk
Loosens the puree and adds creaminess as it simmers.
Cream
Adds fat and a smoother, richer texture when stirred in at the end.

The step that matters

Stir over low heat until hot but not boiling. Once cream is added, boiling can cause it to split or turn grainy, and high heat can scorch the milk solids. Gentle heat keeps the puree smooth and glossy.
