Baked Carp

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the carp

  1. Clean the carp and stuff it as you would for soles, then sew it up.

  2. Brush it with egg yolk, cover with bread crumbs, and baste with oiled butter.

Bake

  1. Place the carp in a deep baking dish.

  2. Add stock, sliced onions, bay leaves, herbs, port wine, and anchovies.

  3. Cover the dish and bake at 350°F (175°C) for 1 hour.

  4. Keep the fish warm after baking.

Make the gravy and serve

  1. Pour the cooking liquid into a saucepan and heat it with butter, mustard, cayenne, and soy sauce.

  2. Serve the fish garnished with lemon, parsley, and horse-radish.

  3. Pour the gravy into a sauce boat.

What each ingredient does

Carp
Forms the main body of the dish, cooking through gently in the covered dish.
Egg yolk
Brushed on the fish to help the bread crumbs adhere and brown lightly.
Bread crumbs
Form a coating that helps the surface brown and seals in moisture.
Port wine
Adds sweetness and depth to the cooking liquid that becomes the gravy.
Anchovies
Dissolve into the cooking liquid, adding savoury depth to the gravy.
Butter
Adds richness and fat to the finished gravy.

The step that matters

Keep the covered bake gentle and the fish warm. Fish proteins set quickly at high heat and become dry and firm, so a covered dish at moderate heat keeps the flesh moist. Holding it warm afterwards avoids overcooking while the gravy is finished.

Swap the onion
