To Salt Beef

Ingredients

Directions

  1. Choose a piece of beef with as little bone as possible.

  2. Sprinkle the beef and let it drain for a day.

  3. Rub the beef with coarse sea salt, a small amount of saltpetre, bay salt, and cochineal powder.

  4. Hub the pickle into the meat daily for a week, then turn it.

  5. After eight days, drain it from the pickle and smoke it at the oven-mouth or send it to the baker's for a few days.

  6. To serve, boil the beef until tender with greens or carrots.
