Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
Provide the main meat and rich, concentrated flavour of the broth.
Butter
Browns the ingredients during frying, adding roasted flavour and colour to the soup.
Onions
Add sweetness and aromatic depth as they brown in the frying step.
Mutton shanks
Release collagen and savoury flavour into the broth during long, gentle stewing.
Ham
Adds salty, savoury depth to the stock.

The step that matters

Fry without burning. Browning builds the soup's colour and roasted flavour, but scorched fats and solids turn bitter and can taint the whole pot, so heat must stay moderate and the pieces must be stirred.

Swap the celery

How well each one fits the dish's main ingredients (ham, onion, butter, mutton, bread):

  1. Garlicfits better
  2. Capersfits about as well
  3. Parsleyfits about as well
  4. Celerythe original

Fit is the average pairing score against ham, onion, butter, mutton, bread. Candidates are from the same food group and used in at least 100 recipes.
