A Very Fine Crust for Orange-cheesecakes, or Sweet-meats

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Dry the flour and mix it with the sugar.

  2. Work the butter with your hands until frothy.

  3. Gradually add the flour mixture to the butter, mixing well.

  4. Incorporate the beaten and strained egg yolks and egg whites.

  5. If the mixture is too loose, add more flour and sugar until it can be rolled.

  6. Line your pattypans with the dough and fill them.

  7. Bake in a moderate oven (350°F / 175°C) for about 15 minutes.

  8. Prepare icing by beating refined sugar with the egg white until thick.

  9. Ice the baked pastries and place them in the oven to harden.

  10. Serve cold.
