Braise

  1. Braise gently over low heat for about 1 hour.

  2. Drain the celery on a napkin and cut each head into three equal lengths.

Garnish and serve

  1. Dish the celery like cutlets and garnish with small circular croutons of fried bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body of the dish and becomes tender through parboiling and braising.
Stock
Braising liquid that gently cooks the celery and adds savoury flavour.
Beef marrow
Enriches the croutons with rich, fatty flavour and a soft, creamy texture.
Butter
Adds fat and gloss to the brown sauce, giving it a smoother, rounder mouthfeel.

The step that matters

Braise gently over low heat. Gentle, low heat lets the celery soften evenly through its fibres without breaking down or becoming mushy, and keeps the stock from reducing too quickly.

Swap the celery

How well each one fits the dish's main ingredients (beef, lemon, pepper, butter):
