Ingredients

Directions

Prepare the almonds

  1. Combine Jordan and bitter almonds with hot water in a stewpan and bring to a boil.

  2. Drain the water, rinse the almonds in cold water, and drain them in a cloth.

  3. Remove the hulls or skins from the almonds, wash and pound them in a mortar with orange-flower water and loaf sugar until creamy.

Make the almond milk

  1. Transfer the mixture to a basin, add spring water, mix, and let it stand in a cool place for 1 hour.

  2. Strain the almond milk through a clean sieve into a basin, then add clarified isinglass and mix well.

Set and serve

  1. Pour the mixture into a mould set in ice and let it firm up before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Jordan almonds
Provide the main almond flavour and body of the milk once pounded and strained.
Bitter almonds
Add a sharp, aromatic almond note that balances the sweetness.
Loaf sugar
Sweetens the milk and helps the almonds break down into a smooth paste when pounded.
Clarified isinglass
Acts as a setting agent, gelling the almond milk so it firms in the mould.

The step that matters

Pour into the mould set in ice. Isinglass sets only when the mixture is well chilled, so the mould must be fully surrounded by ice and the mixture left long enough to firm before unmoulding.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
