Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

To Roast Pigeons

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pick and draw the pigeons, then truss them, keeping the feet on.

  2. Make a stuffing with the chopped liver, bread crumbs, parsley, pepper, salt, and butter; place this inside the pigeons.

  3. Make a slit in one leg and slip the other leg through it.

Roast and serve

  1. Skewer the pigeons and roast them at 400°F (200°C) for 30 minutes, basting with butter.

  2. Serve with brown gravy in a small tureen.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which cooks through while the skin browns in the oven.
Bread crumbs
Absorb butter and juices in the stuffing, keeping it moist and giving it body.
Chopped liver
Adds rich, savoury flavour and a soft texture to the stuffing.
Butter
Adds fat for richness and browning, and moisture when basted over the birds.

The step that matters

Roasting and basting the pigeons. Pigeon meat is lean and dries out quickly, so regular basting with butter keeps it moist while the skin browns. Roasting at a steady high heat for the stated time helps the birds cook through without overdrying.

Swap the parsley

How well each one fits the dish's main ingredients (liver, bread, pepper, butter):

  1. Sagefits about as well
  2. Parsleythe original
  3. Thymefits about as well
  4. Marjoramfits less well

Fit is the average pairing score against liver, bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
