To Boil a Turkey

Ingredients

Directions

  1. Clean the turkey by removing feathers and singeing hair with burning paper without blackening the skin.

  2. Thoroughly clean the inside by drawing and wiping.

  3. Cut off the legs at the first joints and remove the sinews; pull down the skin and tuck the legs inside.

  4. Cut off the head close to the body, leaving the skin long, and remove the craw.

  5. Make stuffing by mixing chopped suet, bread crumbs, chopped parsley, pepper, coarse sea salt, and a little nutmeg; wet with 1 egg.

  6. Stuff the mixture into the breast, leaving room for it to swell, then pull the skin of the breast over the stuffing.
