What each ingredient does

Egg yolks
Thicken the sauce as they set, giving it a smooth, custard-like body.
Sherry
Adds a fortified wine flavour that gives the sauce its character.
Powdered sugar
Sweetens the sauce and dissolves easily in the warm sherry.
Lemon juice
Adds acidity that brightens the sweetness and balances the rich yolks.

The step that matters

Whisk the yolks in off the heat. Egg yolks begin to coagulate at around 70°C (160°F). Removing the pan from the heat before whisking in the yolks and lemon juice, and whisking quickly, keeps them from scrambling and leaves the sauce smooth.
