Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and stew

  1. Prepare the goose giblets as for Giblet Soup.

  2. Stew the giblets in a little water for about 1 hour.

  3. Remove the giblets from the liquid and let both cool separately.

Assemble and bake

  1. In a pie dish, layer beef or veal at the bottom and place the giblets on top.

  2. Season with pepper and coarse sea salt.

  3. Add a little flour to the liquid and pour it over the giblets.

  4. Cover the pie and bake at 350°F (175°C) for about 1.5 hours.

What each ingredient does

Goose giblets
Form the main filling and flavour of the pie.
Beef or veal
Lies beneath the giblets and adds meaty richness to the filling.
Flour
