What each ingredient does

All-purpose flour
Forms the paste that wraps and holds the filling together while it cooks.
Dripping or suet
Adds fat that keeps the paste tender and rich rather than dry.
Gooseberry jam
Provides sweetness and fruity moisture for the filling inside the roll.

The step that matters

Sealing and wrapping the roll. If the outer edge is not sealed and the cloth is not tied snugly, the filling can leak or the roll can unravel during boiling. A tight roll also helps the pudding hold its shape when sliced.

Swap the gooseberry

How well each one fits the dish's main ingredients (flour, sauce):

  1. Raisinfits better
  2. Avocadofits better
  3. Gooseberrythe original
  4. Limefits about as well

Fit is the average pairing score against flour, sauce. Candidates are from the same food group and used in at least 100 recipes.
