What each ingredient does

Loose tea
Supplies the main flavour and aroma as its compounds dissolve into the water.
Boiling water
Draws flavour out of the leaves during steeping and sets the strength of the cup.

The step that matters

Steep without boiling. Keeping the water just below boiling during steeping avoids over-extracting bitter tannins from the leaves, so the tea tastes smooth rather than harsh.
