Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Releases starch into the water, giving the drink its light body and slightly cloudy look.
Lemon juice
Adds acidity that brightens the drink and balances the sweetness.
Lemon rind
Contributes aromatic oils from the peel that scent the drink.
Sugar
Adds sweetness to balance the lemon's tartness.

The step that matters

Simmer the barley. Simmering gently releases starch and flavour from the barley into the water. Simmering too briefly gives a thin, weak drink, while boiling hard can cloud it and make it taste harsh.

Swap the lemon

How well each one fits the dish's main ingredients (barley, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
