Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

To Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Roast the beef

  1. Preheat oven to 400°F (200°C).

  2. Place the beef in the oven and roast, basting with its own drippings.

  3. Once cooked, transfer the meat to a hot dish and pour off the fat, leaving the sediment.

Make the gravy and serve

  1. Add hot water, salt, and pepper to the drippings in the roasting tin.

  2. Place the tin on the stove, stir until boiling, and pour the gravy around the meat.

  3. Garnish with scraped horseradish before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat; roasting browns and firms its surface while keeping the inside tender.
Hot water
Dissolves the browned bits and drippings in the roasting tin to form a thin gravy.

The step that matters

Pouring off the fat while keeping the sediment. Fat left in the tin makes the gravy greasy and dull, while the browned sediment gives flavour and colour. Pour off only the fat so the sediment stays in the tin for the gravy.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Horseradishthe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
