To Roast Veal

Ingredients

Directions

  1. Prepare the stuffing by mixing bread crumbs, chopped suet, egg, parsley, lemon rind, pepper, and salt.

  2. Select the best parts of veal for roasting: fillet, breast, loin, or shoulder.

  3. For the fillet and breast, remove the knuckle bone neatly and stuff with the prepared mixture.

  4. Roll the stuffed fillet firmly and bind it with tape or string, allowing room for expansion.

  5. Cover the ends with buttered paper and baste the veal frequently with melted butter.

  6. Remove the paper shortly before the meat is done.

  7. Transfer the veal to a hot dish, pour off the drippings, season, and mix the sediment with melted butter.

  8. Pour the mixture around the veal and garnish with sliced lemon.
