Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which cooks through during the roast and stays moist when basted.
Butter
Adds richness and fat, and basting with it helps the skin brown and stay moist.
Bread crumbs
Bind the stuffing and soak up juices, giving the filling a softer texture.

The step that matters

Basting the pigeons while they roast. Basting with butter keeps the surface from drying out and encourages even browning, so the skin turns golden rather than dry or pale.

Swap the parsley

How well each one fits the dish's main ingredients (butter, bread, pepper):

  1. Parsleythe original
  2. Sagefits about as well
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
